Honey Chili Crisp Chicken Thighs

9-11 Chicken Thighs
1 tbsp bbq seasoning
Honey Chili Crisp Sauce
1/2 cup honey
3 tbsp sriracha
3 tbsp chili crisp
3 tbsp soy sauce
1 tsp sesame oil

Remove the chicken thighs from the packaging and Pat dry. Trim off any excess pieces of skin or fat. Season on both sides with the barbecue dry rub seasoning of your choice.
Smoke at 275 for 30 minutes skin side up then flip and cook for another 30 minutes skin side down.
Raise the temperature to 325 and cook for another 10 to 15 minutes until skin is crispy and internal temperature is between 185 and 195°F
Prepare the honey sauce by whisking together, all ingredients, then dunk chicken thighs in the sauce before serving.
