Holiday Biscotti

The only Christmas biscotti you'll need this holiday season. So pretty, mixed with pistachios, almonds and cranberries to give it that beautiful Christmas look and they are absolutely delicious! Perfect for your cookie tray! 🌟

Wet Ingredients :
1 cup granulated Sugar
¼ cup Butter, unsalted, soft
2 Eggs, large
2 tbsp Orange Zest (zest of two oranges)
1 tsp Almond Extract
1 tsp Pure Vanilla Extract
Dry Ingredients:
2 cups All-Purpose Flour
1/2 tsp Salt
1 tsp Baking Powder
To Mix-ins:
⅓ cup Pistachios
⅓ cup Almonds, lightly toasted
⅓ cup Dried Cranberries

add the sugar and softened butter together in a small bowl and with a fork or spoon work it together. Set aside
now in a large mixing bowl add in beaten eggs, orange zest, almond extract and vanilla extract and whisk well until combined.
now mix the butter and sugar mixture in with the egg mixture and whisk well until it's smooth. Set that aside
to another bowl add the flour, salt, baking powder and mix ins such as the pistachios, cranberries and toasted almonds. With a fork mix together.
now begin adding the flour mixture into the wet mixture (2 increments) using the cut and fold method to mix together. You should form a nice but slight to touch sticky dough.
roll the portions out into logs about 9-10' inches long and about 2.5'inches wide and 1'inch high.
place logs on lined baking sheets, gently press the tops to flatten then but don't press down hard
bake the logs at 350* F for 30min until they have flattened slightly and very pale gold brown
remove from oven and let them cool 20-25 min then using a sharp knife cut the biscotti into half inch slices and place back on the baking sheet to bake again
lower oven to 300* F and bake them for another 20-25 min until a darker golden and crunchy
transfer to a wire rack to cool
