Street Corn Cauliflower

1 large head cauliflower, cut into florets
3 tbsp olive oil
1 tsp smoked paprika
1 tsp chili lime or @tajinusa seasoning
½ tsp kosher salt
Mix-ins
corn from 1 husk, raw
1 cup black beans, cooked and drained
1-2 ripe avocado, cubed (tossed with lime juice to prevent browning)
Creamy Chili-Lime Sauce (Non-Dairy)
½ cup vegan or parve mayo
Zest + juice of 1 lime
1 small garlic clove, finely grated
1 tsp chili lime seasoning
1 tsp hot sauce to taste
Nutritional yeast

Roast the cauliflower
Toss florets with olive oil + spices. Roast at 425°F for 25 minutes.
Cool completely so it doesn’t steam in the container.
Make the sauce
Whisk mayo, lime, garlic, and chili seasoning. Chill until serving.
Assemble (ahead)
In a large bowl, combine cooled cauliflower, corn, and black beans.
Finish before serving
Add avocado right before serving.
Drizzle with sauce and sprinkle Tajín/nutritional yeast on top.
