Miso Yogurt Roasted Carrots

3 teaspoons miso paste
2 Tablespoon white balsamic
1/2 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon cumin
Kosher salt and ground black pepper
1/2 cup whole-milk Greek yogurt
3 tablespoons honey
6 medium carrots sliced on a sharp diagonal
For Miso Sesame sauce:
1 tbsp miso paste
2 tbsp maple syrup
1 tbsp toasted ground sesame seeds
1/2 cup Greek yogurt

Heat the oven to 425 F with a rack in the middle position. Line a baking sheet with parchment paper.
In a large bowl, mix together miso paste, white balsamic vinegar, onion powder, garlic powder, paprika, cumin, honey, and salt and pepper (optional)
InAdd the carrots and toss to coat.
Layer the carrots in an even layer on the parchment lined baking sheet. Roast for 35-45 mins or until well charred and a carrots are cooked until soft.; stir the carrots once about halfway through.
Make the Miso yogurt sauce by adding the yogurt, sesame seeds, miso and maple syrup in a small bowl.
Spread the yogurt sauce in the bottom of a plate. Place the roasted carrots on top, drizzle with more maple syrup, garnish with parsley, serve and Devour!
