Homemade Summer Sausage

2 lbs medium lean ground beef (80–85%)
2 tbsp @mortonsalt Morton Tender Quick
1/2 tsp garlic powder
1 tbsp mustard seed
2–3 tsp coarse ground pepper (I use 2 so it’s kid-friendly)
1 tbsp liquid smoke
1 tbsp granulated sugar
步驟
Add everything to a large bowl (or stand mixer) and mix really well.
Divide into 2 portions and shape into logs (about 6–7 inches long).
Wrap tightly in plastic wrap (I double wrap).
Refrigerate for 24 hours (don’t skip this step).
Unwrap and place on a sheet pan.
Bake at 275°F for 2 hours.
Cool in the fridge, slice, and store.
Make it once → slice it up → keep it in your fridge or freezer
and suddenly your kids have something they’ll actually eat.
No last-minute scrambling.
