Tomato Cucumber Salad With Feta

1 cup cherry tomatoes (chopped into at least 4ths)

1 cup English cucumber (diced)

1/4 small red onion (thinly sliced)

2-3 tbsp feta cheese

1-2 Tbsp fresh parsley or basil (chopped)

1-2 tsp olive oil

1 tsp lemon juice or red wine vinegar

Salt and freshly cracked black pepper to taste

Optional: pinch of dried oregano

1. Prep veggies

Halve cherry tomatoes or dice regular tomatoes.

Dice cucumber into small, bite-sized pieces.

Thinly slice red onion.

2. Combine ingredients

In a medium bowl, toss tomatoes, cucumber, onion, and chopped parsley/basil.

3. Dress

Drizzle with olive oil and lemon juice (or red wine vinegar).

Season with salt, pepper, and optional oregano.

4. Add feta

Sprinkle crumbled feta on top and gently toss once more.

5. Serve

Chill briefly if desired, but this salad is best fresh at room temperature.

💡 Tips / Variations

Add a few kalamata olives or a pinch of red pepper flakes for extra flavor.

For a creamier dressing, whisk in ½ tsp Dijon mustard with the olive oil and lemon.

Can be made 15–20 min ahead; keep refrigerated and add feta just before serving to avoid sogginess.
