Classic Beef Noodle Skillet

1 lb lean ground beef

12 oz egg noodles

1 small onion, diced

1 medium carrot, finely diced

1 small bell pepper, diced

3 cloves garlic, minced

1½ cups beef broth

1 (15 oz) can tomato sauce

1 tbsp tomato paste

1 tsp Italian seasoning

½ tsp paprika

½ tsp salt

¼ tsp black pepper

1 cup sour cream

1½ cups shredded cheddar cheese

1 tbsp olive oil

Dice onion, carrot, and pepper; mince garlic. Bring salted water to a boil.

Cook noodles 8–10 minutes until al dente; drain.

Heat oil in a 12-inch skillet over medium heat. Brown beef 6–8 minutes; drain if needed.

Add onion, carrot, and pepper; cook 4–5 minutes. Stir in garlic for 30 seconds.

Add broth, tomato sauce, paste, and seasonings. Simmer 5 minutes.

Reduce heat; stir in sour cream until smooth. Fold in noodles and cook 2–3 minutes.

Sprinkle cheese on top, cover, and cook 3–5 minutes until melted.

Garnish and serve warm. Store leftovers up to 3 days refrigerated.
