Tacos gobernador (Shrimp)

TACOS GOBERNADOR
YIELD: 12 tacos ish
25g olive oil
45g unsalted butter
115g white onion, small dice
25g garlic, minced
300g roma tomato, small dice
140g poblano chile, julienned
15g serrano chile, minced
½ Mexican oregano (½ tsp)
454g shrimp, cut into bite sized pieces
30g mayonnaise
30g crema Mexicana
25g tomato paste
20g chipotles in adobo, minced
5g garlic, microplaned
210g chihuahua cheese, grated
210g manchego cheese, grated
12 corn tortillas, warm
In an appropriately sized bow, mix the mayo, crema, tomato paste and chipotles together until well incorporated.

Heat oil in a large saute pan over medium-high heat and add the onion in with a pinch of salt. Cook until starting to take on a little color while stirring. Add the poblanos, serranos, garlic, tomatoes and butter to the pan. Cook down until softened and starting to brown, season with salt and the oregano. Add the chipotle mixture to the pan and warm slightly. Add the shrimp to the pan and cook while stirring until the shrimp are just cooked through. Season generously with salt and pepper. Reserve.
Fill the tortillas with some cheese and heat on a comal until the cheese is almost melted, add some filling and close the tortilla. Cook while flipping until crispy. Serve. Walk up to the table and tacomog on everyone because you’ve just recipemaxxed. kilybye
