French Vinaigrette in a Jar

This is the main salad dressing I make on repeat and always have ready to grab in the fridge. It’s perfectly balanced and literally goes with everything!

Garlic also goes well with it, but can go bitter in the dressing over time (while shallots/ onion remain perfect) so I don’t include if the plan is to make a big portion to store in the fridge.

SAVE the recipe (makes 2 cups/ 500ml)

1 shallot, finely chopped

1/3 cup (80ml) red or white wine vinegar

1 lemon, juiced (or increase vinegar to 1/2 cup)

4 tbsp Dijon mustard

1 cup extra virgin olive oil (or grapeseed oil)

2 tsp salt

1 tsp cracked pepper

Combine all ingredients in a large jar. Close the lid and shake vigorously until well mixed and perfectly emulsified.
