Lemon Fish & Potatoes

4 fillets of fatty fish

4 medium potatoes

1 onion

3 cloves of garlic

1/3 bunch of parsley

2 lemons (juice and zest of one)

150 ml olive oil

salt, white pepper

步驟

In a pot, place the fish head and bones, cover with water, and boil for 15 minutes. Then strain and set the broth aside.

In your cooking vessel, add oil, onions, and garlic, and sauté over very low heat until they are translucent without getting color, as we want our sauce to be white.

Add the potatoes sliced into rounds, then pour in the fish broth just enough to cover the potatoes, add salt and pepper, and cover to simmer for 15 to 20 minutes until the potatoes are tender.

Season the fish fillets with salt and pepper and place them in the pot on top of the potatoes. Then add lemon zest, parsley, lemon juice, and olive oil over the fish, cover, and let it cook for 12 minutes. If the sauce hasn’t thickened well, continue cooking with the lid off until excess moisture evaporates, or thicken with a little cornstarch mixed in cold water, adding it gradually to thicken the sauce.
