Crispy Parmesan Tortellini & Spinach with Lemon Drizzle

10 oz cheese tortellini (fresh or refrigerated)
2 tablespoons olive oil
2 cups baby spinach
1/3 cup grated Parmesan cheese
1/4 teaspoon garlic powder
Salt and black pepper, to taste
For the Lemon Drizzle:
Juice of 1 lemon
1 tablespoon olive oil
1/2 teaspoon Dijon mustard
1 teaspoon honey
Salt and pepper, to taste

Cook the tortellini according to package instructions. Drain and let cool slightly.
In a large skillet, heat olive oil over medium heat. Add tortellini and cook for 4–6 minutes, turning occasionally, until golden and crispy.
Add spinach to the pan and sauté for 1–2 minutes until just wilted.
Sprinkle with Parmesan cheese, garlic powder, salt, and pepper. Toss to coat evenly.
In a small bowl, whisk together all lemon drizzle ingredients until smooth.
Plate the crispy tortellini and spinach, then drizzle generously with the lemon dressing before serving.
