Cinnamon Biscoff Rolls

Cinnamon Biscoff Scrolls:

1 ¼ cups plain flour (¼ cup extra for rolling)

1 cup Greek yogurt

1 tsp baking powder

Pinch salt

Filling:

50g butter, softened

2 tablespoons brown sugar

1 tablespoon cinnamon

1 tablespoon Biscoff

Glaze for the top:

2 tablespoons cream cheese

1 tablespoon Biscoff

¼ cup icing sugar

Dash of vanilla

1 tablespoon Boiling water

Preheat oven to 180°C.

In a large bowl mix flour, yoghurt, baking powder and salt. Turn out onto a floured board and give it a light knead, don’t overwork it. If it’s still sticky at this point use some extra flour to sprinkle on top. Roll dough out until it is about half a centimetre thick.

For the filling combine butter, brown sugar, cinnamon and Biscoff until well combined. Spoon onto dough and spread out evenly covering the entire surface. Gently roll the dough up and with a sharp knife cut into sections. If your dough is sticky again at this point sprinkle with more flour before cutting.

Place scrolls into a lined baking dish (brush with a little milk) and bake for 25-27 minutes or until scrolls are golden and cooked through.

While scrolls are baking make glaze for the top. In a small bowl combine cream cheese, Biscoff, icing sugar, vanilla and boiling water. Once scrolls are cooked removed from oven and top immediately with glaze. Allow to sit for 5-10 minutes, separate scrolls and enjoy warm ♡
