Pickles

Recipe (makes 1 quart

6–8 small cucumbers (3–4 inches long)

1 cup sugar

1 cup white vinegar

1/4 tsp alum (or 1/4 tsp calcium chloride.. or remove completely if you prefer)

1/4 tsp celery seed

1/4 tsp turmeric

1 1/2 tbsp canning salt

1/2 tsp mustard seed

1) Soak whole cucumbers in ice water for 1–2 hours.

2) Slice thin on a mandolin.

3) Layer into a clean quart jar.

4) Heat sugar, vinegar, alum (or calcium chloride), celery seed, turmeric, salt, and mustard seed until sugar dissolves.

5) Pour hot brine over cucumbers.

6) Once cool, seal and refrigerate. Shake daily for 1 week.. or if you can’t wait that long dig in early.
