Texas Roadhouse Smothered Chicken with Jack Cheese

4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup sliced fresh mushrooms
1 small onion, thinly sliced
1 tablespoon butter
1/2 cup chicken broth
1 cup shredded Monterey Jack cheese
2 tablespoons chopped fresh parsley (optional, for garnish)

Preheat oven to 375°F (190°C).
Rub the chicken breasts with olive oil, then season with paprika, garlic powder, onion powder, salt, and pepper.
In a large skillet over medium heat, sear chicken breasts for 4–5 minutes per side until golden brown (they don’t need to be fully cooked yet). Transfer to a baking dish.
In the same skillet, melt butter and add mushrooms and onions. Cook for 4–5 minutes until softened.
Add chicken broth and simmer for 3–4 more minutes to reduce slightly. Spoon the mushroom-onion mixture over the chicken in the baking dish.
Sprinkle shredded Monterey Jack cheese generously over the top.
Bake uncovered for 15–18 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
Garnish with fresh parsley if desired and serve hot with mashed potatoes, green beans, or rice.
