Mini Brownie Cookie Dough Cheesecake Bites

Brownie Base
½ cup unsalted butter, melted
1 cup granulated sugar
2 eggs
1 tsp vanilla extract
⅓ cup cocoa powder
½ cup all-purpose flour
¼ tsp salt
Cookie Dough Cheesecake Layer
8 oz cream cheese, softened
¼ cup brown sugar
2 tbsp granulated sugar
½ tsp vanilla extract
¼ cup all-purpose flour (heat-treated*)
⅓ cup mini chocolate chips
Heat-treat flour by microwaving for 30–40 seconds or baking at 350°F (175°C) for 5 minutes.
Chocolate Ganache Topping
¾ cup semi-sweet chocolate chips
½ cup heavy cream

Make the Brownie Base
Preheat oven to 350°F (175°C).
Line a muffin tin with liners.
Whisk butter and sugar until smooth.
Add eggs and vanilla.
Stir in cocoa powder, flour, and salt.
Spoon brownie batter into liners, filling about ⅓ full.
Bake 10–12 minutes until just set.
Let cool completely.
Make Cookie Dough Cheesecake
Beat cream cheese, brown sugar, and granulated sugar until smooth.
Mix in vanilla and heat-treated flour.
Fold in mini chocolate chips.
Spoon cheesecake mixture over cooled brownie bases.
Chill in the fridge 30 minutes to firm up.
Add Chocolate Ganache
Heat cream until just steaming.
Pour over chocolate chips.
Let sit 2 minutes, then stir until smooth.
Spoon ganache over each mini cheesecake.
Sprinkle extra mini chocolate chips on top.
Chill & Serve
Refrigerate 1–2 hours until fully set.
Serve chilled for clean layers.
