Homemade Pretzels

2 1/2 cups Arrowhead Mills Unbleached Bread Flour
2 ¼ tsp instant yeast
1 cup warm water
1 tsp sugar
1/2 tsp sea salt
Topping
1/2 cup warm water
1 tbsp baking soda
1 tsp coarse sea salt
3 tbsp unsalted butter melted or spray butter

In a bowl combine the yeast and warm water, then let sit for 10 minutes. Add the flour and salt. Mix until soft and smooth, not sticky to the touch.
Place in a lightly oiled clean bowl, cover and rise for 30-45 minutes.
Preheat the oven to 450F
Place the dough onto a lightly oiled countertop. Divide the dough into 8 pieces.
Roll each of the eight pieces into a long rope, and shape each one into a pretzel.
Combine the warm water and baking soda and heat in the microwave for 1 minute.
Dip each pretzel into the soda wash and place onto the greased or lined baking sheet. Sprinkle with coarse sea salt, then let them rest for 10 minutes.
Bake for 10 minutes until golden brown. Remove from oven and brush with the melted butter. Enjoy!
