Judy's Breakfast Casserole

•10 Eggs- slightly beaten
•2 tsp Dry Mustard
•6 Cups Cubed bread
•2 Cups Diced ham or package pork sausage, cooked, crumbled
•2 Cups Shredded Cheese
•3 Cups Whole milk
•1 tsp Salt
•1/2 tsp Black pepper

Optional: 1/2 cup sliced mushrooms, 1 medium plum tomato, chopped, 1/2 cup green onions, sliced
Note-- Prepare the night before and refrigerate.
1. In a large mixing bowl, combine eggs, milk, mustard and salt. Set aside.
2. Place 1/2 of bread evenly in a buttered 9x12 baking dish.
3. Sprinkle with half of the pepper, cheese, meat, and optional items.
4. Repeat steps 2 & 3 for another layer. Pour egg mixture evenly over casserole. Cover with plastic and refrigerate overnight.
5. Bake uncovered at 325 degrees for 55-60 minutes until eggs are set. A knife inserted in middle will come out clean. Tent with foil if top begins to brown before casserole is done.
