Flourless Cottage Cheese Pancakes

1 cup cottage cheese

2 large eggs

2 tablespoons cornstarch

½ teaspoon baking powder

1 tablespoon maple syrup (optional)

½ teaspoon vanilla extract

Blend the batter.In a mixing bowl, combine cottage cheese, eggs, cornstarch, baking powder, maple syrup (if using), vanilla extract, and a pinch of salt. Stir until well blended. For a smoother texture, you can pulse the mixture in a blender or use an immersion blender for a few seconds.

Heat the skillet.Warm a non-stick skillet or griddle over medium heat. Lightly grease it with a small amount of butter or oil.

Scoop and cook.Use a tablespoon to scoop small mounds of batter onto the skillet. Gently flatten each with the back of the spoon. Cook for about 2–3 minutes per side, or until golden brown and set.

Flip with care.Because these pancakes are tender, use a thin spatula to flip them carefully. If the center seems too soft, let them cook a little longer before flipping.

Serve warm.Plate your pancakes and serve with your favorite toppings. We love fresh berries, Greek yogurt, or a light drizzle of honey.
