Mediterranean chicken Pita Bowl

2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
2 pita breads, cut into wedges and toasted
1 cup cooked rice or couscous
1/2 cup cucumber, diced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup olives, sliced
2 tablespoons fresh parsley, chopped
Herb Feta Sauce:
1/2 cup feta cheese, crumbled
1/3 cup Greek yogurt
1 tablespoon olive oil
1 tablespoon lemon juice
1 clove garlic, minced
1 tablespoon fresh parsley or dill, chopped
1 teaspoon dried oregano
Salt & pepper to taste

In a bowl, mix olive oil, paprika, garlic powder, cumin, oregano, salt, and pepper. Coat the chicken evenly.
Heat a grill pan or skillet over medium heat and cook chicken for 5–6 minutes per side until golden and fully cooked. Let rest, then slice.
In a bowl, combine feta cheese, Greek yogurt, olive oil, lemon juice, garlic, herbs, oregano, salt, and pepper. Mix until smooth and creamy.
Assemble the bowl with rice or couscous as the base.
Top with sliced chicken, toasted pita wedges, cucumber, tomatoes, red onion, olives, and parsley.
Drizzle generously with herb feta sauce.
Serve immediately.
