Christmas Spiced Gingerbread Cake

For the cake:

2 ¼ cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tbsp ground ginger

1 tsp cinnamon

¼ tsp nutmeg

¼ tsp cloves

½ tsp salt

½ cup melted butter

½ cup brown sugar

½ cup molasses

2 large eggs

1 cup buttermilk

For the frosting:

8 oz cream cheese, softened

½ cup butter, softened

2 cups powdered sugar

1 tsp vanilla extract

Optional garnish: fresh rosemary, cranberries, cinnamon sticks, powdered sugar “snow”

Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.

Whisk flour, spices, salt, baking soda, and baking powder.

In another bowl, mix melted butter, brown sugar, molasses, and eggs. Add buttermilk.

Combine wet + dry ingredients and mix until smooth.

Pour into pan and bake 30–35 min, or until a toothpick comes out clean.

Beat all frosting ingredients until fluffy, then spread over cooled cake.

Decorate with rosemary, cranberries, and a dusting of powdered sugar.
