Chicken Cordon Bleu Meatloaf

2 lb. ground chicken
1/2 cup gluten-free breadcrumbs
1/2 cup grated Parmesan cheese
1 Tbsp. GF dried basil
1 tsp. GF dried oregano
1/2 Sea salt and GF ground black pepper to taste
2 1/2 cups roughly chopped or grated Swiss cheese, divided
200 g (7 oz.) thinly sliced black forest ham
SAUCE
2 Tbsp. Extra virgin olive oil, more for brushing
1 minced or grated garlic clove
1 tsp. GF dried oregano
GF hot red pepper flakes to taste (optional)
1 x 398 ml can pure tomato sauce
1/4 cup water
4 oz. cubed cream cheese, at room temperature

Preheat the oven to 375 F
In a bowl, mix meat, bread crumbs, parmesan, basil, oregano, salt and three tablespoons of water
Place a large piece of parchment paper on your work surface and brush with oil
Invert the meat mixture on the parchment paper. Rub your hands with oil and shape the meat mixture into a 10x12-inch rectangle. Sprinkle with 2 cups of Swiss cheese
Starting on the short side, top half the meat with black forest ham. Then, start at the short side with the ham to tightly roll by using the parchment paper. Then pinch the ends on both sides. *see recipe snapshot
Using the parchment paper, carefully transfer loaf into a deep baking dish with the seam facing down. Bake for 45 minutes
SAUCE
While the loaf is baking, saute garlic and spices in olive oil until just fragrant—about 30 seconds. Add tomato sauce and water and bring to a boil. Add the cream cheese and cook over medium heat until the cheese has melted, stirring as needed. About 5 minutes. Taste and season with salt as needed and set aside
When ready, pour the sauce over the meatloaf and top with the remaining 1/2 cup of Swiss cheese. Continue baking until the cheese has melted, about 15 minutes
