Lunch Today! Asian Cucumber Salad

RECIPE - Makes 2 cups

4-5 mini cucumbers

1 Tbsp liquid aminos (or soy sauce)

1 Tbsp rice vinegar

2 tsp chili oil

2 tsp sesame oil

1 Tbsp sesame seeds

1 tsp minced garlic

1 tsp golden monkfruit sweetener

1 tsp chili powder

1/2 tsp crushed red pepper flakes

2 Tbsp lightly salted peanuts, crushed

步驟

Slice your cucumbers to your desired thickness. Sprinkle some salt on them and set them aside for 10 minutes.

Blot them with a paper towel and then transfer them to a bowl.

Add in the remaining ingredients and stir to combine.
