Bacon and balsamic braised radishes

20g butter

3 streaky bacon rashers, chopped

2 large shallots, finely sliced

450g radishes, halved

2 tbsp balsamic vinegar

120mI water

1 tbsp fresh thyme leaves

Salt and black pepper

步驟

1 Place the chopped bacon in a large heavy pan over a medium-high heat and cook for 4-5 minutes until golden and lightly crispy. Add the shallots and cook for two minutes. Use a slotted spoon to transfer to a place.

2 Add the butter to the pan and allow to melt. Add the radishes cut-side down and cook for 2-3 minutes without moving, until the bottoms begin to brown.

3 Stir the bacon and shallots back into the pan. In a jug, stir together the balsamic vinegar and the water. Pour into the pan.

4 Cover with a lid, turn the heat to low and simmer for 8-10 minutes or until the radishes are tender.

5 Remove the lid and simmer for 3-4 minutes, or until the liquid has reduced and is syrupy. Stir in the fresh thyme leaves, season to taste and serve.
