No Egg Banana Cake (date Syrup)

3 very ripe bananas (330–360 g, peeled)
¾ cup date molasses / silan or maple syrup (240 g)
½ cup avocado oil (110 g)
1 tsp vanilla extract (5 g)
½ tsp salt (4.5 g)
1 tsp baking soda (6 g)
1 tbsp cinnamon (6.5 g)
1½ cups self-rising flour (225 g)
or all-purpose flour + 1 tsp / 6 g baking powder)
Optional toppings:
Chocolate chips (70 g)
Slivered almonds (15–25 g)
Chopped dates
Instructions (Blender Cake!)

Add bananas, silan, oil, vanilla, salt, baking soda, and cinnamon to a blender.
Blend under 1 minute, just until smooth.
Add the flour, and mix by hand until just combined.
Do not over-mix, overworking flour develops gluten, which makes the cake dense instead of soft and tender.
Pour batter into a greased pan. I used a 9×13, topped with chocolate chips and slivered almonds (dates work great too).
Bake in a preheated 350°F / 180°C oven:
9×13 pan: about 20 minutes
Loaf pan: about 45 minutes
The flatter the cake, the less time it needs.
If a toothpick comes out clean from the center, it’s ready.
