剁椒蒸鱼

2 whole baby barramundi
葱 (large chunks and finely chopped for garnish)
姜, sliced
料酒, salt
剁椒酱:
1 small jar 剁椒
Minced or crushed garlic (about 3 heaped tbsp)
1 tsp sugar and salt
1 tbsp soy sauce
1 tbsp oyster sauce
步驟
1. Clean fish thoroughly, pat dry with paper towel. Rub with salt, 料酒, insert spring onion chunks in belly and ginger slices along sides (cut slits). Rest for 30 min
2. Prepare sauce - add oil to pan, fry garlic until fragrant. Add 剁椒, soy sauce, 蚝油, sugar, salt. Stir fry for 3-4 mins
3. Transfer fish to steaming receptacle, drizzle sauce on top. Steam for 12 min if 1 fish, 16 min if 2 fish. Once finished, garnish with chopped green onion.
