1lb chicken thighs

2 tbsp cooking oil

3-4 garlic cloves minced

3 tbsp red curry paste

2 tsp brown sugar

2 tsp fish sauce (adjust to taste)

1 can coconut milk

1 4oz can bamboo shoots drained

1 small onion diced

1 small bell pepper thinly sliced

juice of 1 lime

10-12 fresh basil leaves for garnish

salt to taste

2-3 fresh green chilis (optional)

Recipe:

步驟

Turn stove on to high heat. Add enough cooking oil to coat bottom of pan. Let oil heat up. Then add 1 tbsp garlic & cook until fragrant.

Once garlic turns fragrant, add 1 lb chicken thighs. Cook until all the pink is gone.

Once pink is gone, add 2 tsp brown sugar & 3 tbsp red curry paste. Mix.

Add in 1 small onion diced, 1 thinly sliced small bell pepper & 1 14 oz can bamboo shoots. Cook with lid on for 1-2 minutes.

Add in 1 can coconut milk. Add 2 tbsp fish sauce. Mix. Cook until chicken is completely cooked.

Add juice of freshly squeezed lime. Turn fire off. Mix it up.

Garnish with fresh basil. Ready to eat! Serve with rice or enjoy on its own.
