Ballymaloe Chicken

Liquid Gold chicken 🤍
Whole dinner came to €14.53. Serves 4 comfortably. Purchased everything at Lidl.
This sounds (and tastes) fancy but it’s actually very simple.
You need:
1 whole chicken (about 1.3kg)
20g soft butter
1 heaped tsp ground coriander
1 heaped tsp ground cumin
1/4 tsp turmeric
pinch chilli powder
2 tbsp lemon juice
4 green chillies
225ml cream
handful fresh coriander
salt + pepper
Ballymaloe called for whole spices to be ground first, then toasted. BUT I just use pre- ground spices - sometimes I toast them first, sometimes I don’t. Both work.)
Pre-heat your oven to 180

Mix HALF the butter with the coriander, cumin, turmeric, chilli powder + a pinch of salt. Set aside.
Smear the OTHER half of the plain butter over the chicken breasts -to brown the chicken breast-side down in a thick bottomed casserole dish until golden. (Medium heat - you want it to sizzle when you place the chicken in but not to burn the skin)
Season the chicken with salt and pepper, let cool slightly and then rub over the spiced butter.
Put the chicken back in your casserole dish - add the chillies and pour over the lemon juice, cover tightly with greaseproof paper and tight lid and roast at 180°C for about 90 mins.
Remove the chicken and let it rest.
Pour the cooking juices into a bowl/jug and pop into the fridge for a bit so the fat hardens on top (easiest way to then remove the layer of fat).
Add the cooking juices back into the pan with the cream + fresh coriander and simmer for a few mins until at your desired consistency. (Taste it- it’s insaneeee!)
Serve with buttery or crushed baby spuds or roasties (even rice or chips would work) and a simple leafy green salad 🤍
NOTE: Butter and spices are not priced as I always have those on hand.)
