Blueberry Chicken Salad

2 Tbsp Dijon mustard

3 1/2 Tbsp shallots, minced

4 1/2 Tbsp honey

4 1/2 Tbsp fresh lime juice

2 tsp kosher salt

1 tsp black pepper, freshly ground

2 Tbsp fresh rosemary, minced

7 Tbsp olive oil

2 lbs grilled chicken breast, torn into small pieces

3 medium granny smith apples, sliced 1/4 inch thin

1 1/2 cups green grapes

1 1/2 cups fresh blueberries, washed

1/4 cup hazelnuts, toasted and chopped

1/3 cup crumbled gorgonzola cheese

步驟

In a small bowl whisk together the mustard, shallots, honey, lime juice, salt, pepper and rosemary. Slowly whisk in the olive oil to form an emulsion. Reserve. Combine the chicken, apples, grapes, blueberries, hazelnuts and gorgonzola cheese in a large mixing bowl. Pour dressing over the salad and toss well to combine thoroughly. Taste for seasoning. To roast the hazelnuts place on a baking sheet and place in a 350 degree oven until they start to brown about 5 to 10 minutes. Watch carefully so they do not burn.
