Honey Garlic Butter Zucchini

3 medium zucchini
Salt
Olive oil
For the butter:
1 tbsp oil
3 tbsp butter
1 tbsp honey
1/2 tsp salt
1 tsp lemon juice
1/2 tsp. Lemon zest
4 cloves minced garlic

Preheat the oven to 350 convection or 375convention
Slice the zucchini lengthwise and score the top. Dry the cut section with a paper towel. Set Aside.
Heat a cast iron pan or heavy skillet over high heat. Add some olive oil, salt the cut side part of the zucchini and place in the pan face down. Place a heavy pan on top to press the zucchini down. Sear for 6-8 minutes or until the tops are browned. Flip the zucchini over and place in the oven for 10-15 minutes (keep in the oven for another 5 mins if you prefer it well done)
Place a small pan in medium heat. Add oil, butter, honey, salt, parsley, garlic and lemon juice and zest. Heat for 2 mins.
Remove the zucchini from the oven and spoon of the butter over each zucchini and squeeze a bit more lemon juice on top if desired. Serve and Devour!
