Honey Lime Chicken Rice Stack with Whipped Garlic Feta

For the Honey Lime Chicken

2 large chicken breasts, diced

2 tbsp olive oil

2 tbsp fresh lime juice

1 tbsp honey

2 garlic cloves, minced

1 tsp chili powder

½ tsp smoked paprika

½ tsp ground cumin

Salt & black pepper, to taste

For the Rice Base

1 cup jasmine or basmati rice

2 cups water or chicken broth

½ tsp salt

1 tbsp chopped fresh cilantro

Zest of ½ lime

For the Whipped Garlic Feta

¾ cup crumbled feta cheese

½ cup plain Greek yogurt

1 tbsp olive oil

1 garlic clove, minced

1 tbsp fresh lemon juice

1–2 tbsp water (to thin if needed)

Black pepper, to taste

Optional Fresh Toppings

½ cup diced avocado

½ cup cherry tomatoes, halved

¼ cup thinly sliced red onion

Extra cilantro for garnish

Cook the Rice

Rinse rice under cold water until water runs clear.

In a saucepan, combine rice, water (or broth), and salt.

Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes (or according to package instructions).

Remove from heat and let sit covered for 5 minutes. Fluff with a fork and stir in chopped cilantro and lime zest.

Marinate and Cook the Chicken

In a bowl, whisk olive oil, lime juice, honey, garlic, chili powder, smoked paprika, cumin, salt, and pepper.

Add diced chicken and toss well. Marinate for at least 15–20 minutes.

Heat a skillet over medium-high heat and cook chicken for 6–8 minutes, stirring occasionally, until caramelized and fully cooked.

Make the Whipped Garlic Feta

In a food processor or blender, combine feta, Greek yogurt, olive oil, garlic, lemon juice, and black pepper.

Blend until smooth and creamy. Add water 1 tablespoon at a time if needed for a silky texture.

Assemble the Rice Stack

Using a small bowl or food ring mold, press a layer of rice onto the plate to form the base.

Top with a generous layer of honey lime chicken.

Spoon or pipe whipped garlic feta over the top.

Garnish with avocado, cherry tomatoes, red onion, fresh cilantro, and a squeeze of lime.
