Cook 1½ kg parsnips in a large pan Of salted boiling owater for 10-15 minutes until tender but not mushy.. Drainweil, then return to the oars. Push the parsnips toone side and put 85g butter, A tbsp Chopped fresh thyme, some salt and plenty of black pepper into thespace. Return the saucepan to a very low heat and lets i the butter malt and the parsnips cpntinue to dryfor 1-2. D minutes. Add 150mi milk and mash the parsnips into the butter until smooth. Cook 3 streaky bacon rashers until crispy, then chop. Stir almost all of the bacon ihto the mash with almost all of 100g grated Parmesan, using the last of both to top the mash. Serve hot
