INGREDIENTS
• 16 pieces dark meat chicken (thighs and drumsticks) • 6 tbsp extra virgin olive oil, divided • 3-4 onions, peeled and sliced • 16 oz brown mushrooms, sliced • 1/2 cup soy sauce • 1/2 cup honey • 1 tsp turmeric • 2 tbsp paprika • 4 garlic cloves, minced • 2 bags chestnuts, chopped • 1 package gnocchi (optional) • Salt and pepper, to taste

DIRECTIONS
1. Preheat oven to 350°F.
2. Heat 2 tbsp of olive oil in a large pan over medium heat. Add the onions and sauté until they begin to soften.
3. Add the mushrooms and cook until all the liquid has evaporated.
4. In a bowl, whisk together the remaining olive oil, soy sauce, honey, turmeric, paprika, garlic, salt, and pepper.
5. Spread the sautéed onions and mushrooms evenly over the bottom of a large roasting pan or baking dish.
6. Arrange the chicken pieces on top, then scatter the chestnuts and gnocchi (if using) over the chicken.
7. Pour the sauce evenly over everything. Cover with a sheet of damp parchment paper, then cover the pan tightly with foil.
8. Bake for 1 hour.
9. Remove the cover, baste the chicken with the pan juices, and raise the oven temperature to 425 F. o. Bake uncovered for 20 minutes, basting once halfway through. 11.If desired, broil for a few minutes at the end to brown the chicken - watch carefully to avoid burning.
