Healthy Date & Walnut Cake

240g water

300g dates

3 eggs

45ml extra virgin olive oil

180g rolled oats

50g chopped walnuts

1 tsp baking soda

Optional: vanilla + pinch of salt)

步驟

Blend dates, water, eggs, oil, baking soda (plus optional vanilla + salt) until smooth.

Add oats and pulse briefly to combine.

Pour into a lined 18cm/7” cake tin, sprinkle with chopped walnuts.

Bake at 180°C (356°F) for 45 mins.

Let it cool before slicing.

Storage:

Room temp: up to 2 days

Fridge: 3–4 days

Freeze: slice, add parchment between layers, and store in a sealed container.
