Mango Ginger Shrimp Stir Fry

1½ lbs jumbo shrimp, peeled and deveined

2 tsp curry powder

¼ tsp ground cumin

2 tsp smoked paprika

1 tsp salt

1 tsp black pepper

1 tbsp olive oil

For the Stir Fry:

2 ripe mangos, peeled and diced

5 garlic cloves, chopped

2 tbsp fresh ginger, minced or grated

3 scallion stalks, chopped

1 cup green beans, trimmed and halved

2 bell peppers, sliced (mix of red, yellow, or orange for color)

For the Sauce:

½ cup oyster sauce

3 tbsp sweet soy sauce

2 tbsp regular soy sauce

1 lime, zested and juiced

1.In a large bowl, toss the shrimp with curry powder, cumin, smoked paprika, salt, pepper, and olive oil. Let it marinate while you prep the veggies and sauce.

2.In a small bowl, whisk together oyster sauce, sweet soy sauce, soy sauce, lime zest, and lime juice. Set aside.

Heat a large wok or skillet over high heat. Once hot, add the shrimp in a single layer (work in batches if needed). Sear for 1–2 minutes per side until just cooked through. Remove from the pan and set aside.

In the same pan, reduce heat to medium. Add a drizzle of more oil if needed, then toss in the garlic, ginger, and scallions. Sauté for 2–3 minutes until fragrant.

5.Stir Fry Time Add the green beans and bell peppers. Stir fry for 3–4 minutes until slightly tender but still crisp. Toss in the diced mango and cook for 1 more minute.

6.Bring It Together Return the shrimp to the pan. Pour in the sauce. Crank the heat back up and stir fry everything for another 2–3 minutes until coated, saucy, and glossy.

7.Serve hot over jasmine rice, rice noodles, or straight from the wok!! LOL enjoy
