One Pot Chicken Orzo

One Pot French Onion Chicken Orzo
Recipe:
3-4 tbsp olive oil
4-6 boneless skinless chicken cutlets (use bone in or out, white or dark)
2 large onions, sliced
2 tsp. Dried thyme
2 tsp. Salt
1 tsp. Pepper
1 tbsp Garlic powder
1 ½ cups orzo
Beef, chicken or vegetable broth to cover everything (about 2 cups)
2-3 tbsp date syrup or honey
½ cup shredded gruyere cheese

In a large pan, add the oil and pan sear your chicken on both sides for about 5-6 minutes until golden - remove and set aside. It won’t be fully cooked but it will be going back in the oven so that is ok. Add the onions into that pan with a little more oil if needed. Add the spices and mix well.
Cover and cook the onions on medium low heat for 10 minutes. Stire them every few minutes.
Uncover pan and mix the onions and scrape the bottom for all the seasoning. Add the orzo and then pour the broth over it all.
Add the chicken back in, the broth should pretty much cover them. Drizzle date syrup all over the chicken.
Cover and cook in oven on 375F for 25 minutes. Uncover, mix it around and cook uncovered for another 20-25 minutes until all the broth has been absorbed.
Add shredded gruyere cheese and broil for 1-2 minutes. Garnish with finely chopped chives.
