Crispy Parmesan Zucchini Rounds

Produce

2 medium Zucchinis, sliced into 1/4-inch rounds

The Coating

1/2 cup Grated Parmesan cheese

1/2 cup Panko breadcrumbs

1 tbsp Olive oil

Seasoning & Garnish

1/2 tsp Garlic powder

1/2 tsp Italian seasoning

To taste: Salt and black pepper

For garnish: Fresh parsley

Prep: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper to prevent sticking.

Coat: In a bowl, toss the zucchini rounds with olive oil until evenly coated. In a separate shallow dish, combine the Parmesan, panko, garlic powder, and Italian seasoning.

Dredge: Press each zucchini slice into the breadcrumb mixture until well-coated on both sides.

Bake: Arrange the rounds in a single layer on the prepared baking sheet. Bake for 15–20 minutes, flipping the slices halfway through, until they are golden brown and crisp.

Serve: Garnish with fresh parsley. These are excellent when served with an optional side of marinara sauce for dipping.

Note: For a faster alternative, these can be prepared in an Air Fryer at 400°F for approximately 12 minutes.
