Delicious Ricciarelli Recipe

400 g ground almonds (blanched)

150 g powdered sugar

2 egg whites

1 tsp lemon juice

1 tsp vanilla extract (optional)

Powdered sugar for rolling and dusting

步驟

In a clean bowl, whisk the egg whites together with the lemon juice until stiff peaks form. Gradually add the powdered sugar while continuing to whisk until the mixture is smooth and glossy.

Gently fold the ground almonds into the egg white mixture. If desired, add the vanilla extract.

Using a tablespoon, scoop small portions of the dough and roll them in powdered sugar. Shape the portions into ovals and place them on a baking tray lined with parchment paper.

Preheat the oven to 160°C (top and bottom heat) and bake the cookies for 15-20 minutes, until they are lightly golden. They should remain soft in the center.

Remove the cookies from the oven and let them cool on a wire rack.
