Fish Tacos with Mango Slaw

For the Fish:

2 lbs cod

1 tbsp smoked paprika

2 tsp salt

1 tsp onion powder

1 tsp garlic powder

1 tsp cayenne powder

1/2 tsp black pepper

1/2 tsp dried oregano

1/2 tsp dried thyme

Juice of 1/2 lime

Juice of 1/2 small orange

4 tbsp olive oil

For the Mango Slaw:

1 mango, cubed

1/2 red onion, diced

1/2 red bell pepper, chopped

1/4 cup pickled jalapeño, chopped

4 tbsp cilantro, chopped

Juice of 1/2 lime

Salt to taste

3 cups shredded red cabbage

For the Sauce:

1/4 cup pickled jalapeño

1/4 cup cilantro

1/2 cup mayo

1/2 cup sour cream

1/2 tsp paprika

2 garlic cloves

1/2 tsp onion powder

1/2 tsp ground cumin

Juice of 1/2 lime

Step 1 - Marinate the Fish: In a small bowl, mix all the seasoning ingredients. Pour the marinade over the cod and let it sit for 30 minutes to soak up the flavors.

Step 2 - Cook the Fish:

Pan Sear Option: Heat 1 tbsp olive oil in a pan over medium-high heat. Sear the cod in batches for 4 minutes on each side until golden and cooked through.

Oven Option: Preheat your oven to 400°F (200°C) and bake the cod for 10 minutes until flaky and tender.

Step 3 - Prepare the Mango Slaw: Toss together mango, red onion, bell pepper, pickled jalapeño, cilantro, lime juice, and salt in a bowl. Add the shredded red cabbage and mix well.

Step 4 - Make the Sauce: Blend all sauce ingredients in a food processor or blender until smooth and creamy.

Step 5 - Assemble the Tacos: Load up your tortillas with the seared or baked cod, top with mango slaw, and drizzle generously with the creamy sauce. Enjoy your flavorful fiesta!
