The Juiciest Whole Chicken You’ll Ever Make

1 whole chicken (about 3½ lbs)
2 cups sliced red bell peppers
2 cups sweet potato chunks
2 cups Dutch potatoes, cut in half
2 cups sliced leeks
2 cups halved shallots
4 Tbsp paprika
2 Tbsp salt (or less, to taste)
1 Tbsp black pepper
1 Tbsp garlic powder
½ cup olive oil
A drizzle of silan, honey, or maple syrup
1 whole orange

Prep the chicken:
Wash and pat dry the whole chicken, then place it in an ovenproof pan.
Add the vegetables:
Arrange the peppers, sweet potatoes, Dutch potatoes, leeks, and shallots all around the chicken.
Season everything:
Combine the paprika, salt, black pepper, garlic powder, and olive oil. Massage this mixture all over the chicken—under the skin, inside the cavity, and all around the vegetables.
Prep the orange:
Scrub the peel well, then poke several holes into the orange. Place it next to the chicken so it releases its aroma and juices as it cooks.
Sweeten + cover:
Drizzle silan (or honey/maple syrup) over the top. Cover with parchment paper first, then foil to prevent the foil from touching the food.
Bake:
Bake at 400°F (200°C) for 2 hours, covered.
Finish:
After 2 hours, remove the cover, baste the chicken, and broil for 10 minutes to brown the skin.
Serve:
Enjoy the most moist, tender, flavor-packed chicken—perfect for Shabbat.
