Simple Crispy Batter Mix

3/4 cup all-purpose (plain) flour
2 tbsp cornstarch
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
3/4 cup ice-cold water

Sift together flour, cornstarch, baking soda, baking powder, and salt.
When ready to fry, gradually mix in ice-cold water. Stir gently until smooth. Don’t overmix—small lumps are fine.
Pat fish, chicken, or vegetables dry. Dip in batter, coating evenly. Let excess drip off.
Heat oil to 350°F (175°C). Fry in batches for 3–5 minutes until golden brown and fully cooked.
Remove from oil and place on a wire rack to keep crispy.
