Chipotle Chicken Tacos & Mango Avocado Slaw Charred Tortilla

Mango Avocado Slaw :

One mango, diced
One avocado, diced
1/4 onion, diced
2 tablespoons cilantro, chopped
Half a jalapeño sliced
Salt to taste , juice of half a lemon
Chicken:
2 chicken thighs boneless skinless
1/2 teaspoon each salt , chili powder, chipotle seasoning, garlic powder, paprika or cayenne
1 tablespoon olive oil
2 tablespoons- Olive oil to cook the chicken
Flour tortillas - I used tortilla land ready to cook tortillas
Mix mango avocado, slaw ingredients, and set aside.
Season chicken.
Add oil to a skillet and cook chicken 3-4 minutes, covered with a lid flip and cook another 3-4 minutes on low medium heat. Make sure to cover the chicken with the lid when you cook to keep the heat inside and moisture to get juicy chicken don't overcook.
Remove the chicken and let rest for five minutes.
Slice the chicken.
Cook the tortillas until you get a nice char . Remove .
In the same pan, add couple of spoons of shredded cheddar. Add the tortilla on top and start spinning so it sticks to the tortilla.
Plate and top tortilla with chicken and mango avocado slaw.
