Chicken Pepper Rice Skillet
Ingredients:
1.5 pounds boneless, skinless chicken breast, sliced
1 tablespoon olive oil
1 small yellow onion, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups cooked yellow rice
2 tablespoons chopped fresh parsley or cilantro
Instructions:
Heat olive oil in a large skillet over medium-high heat. Add the chicken, paprika, garlic powder, onion powder, cumin, salt, and black pepper.
Cook for 6 to 8 minutes, stirring often, until the chicken is browned and cooked through.
Add the onion, red bell pepper, green bell pepper. and vellow bell pepper. Cook for 4 to minutes until the vegetables are tender-crisp, then stir in the garlic and cook for 30 seconds.
Add the cooked yellow rice to the skillet and gently toss everything together for 2 to 3 minutes until heated through and well combined.
Sprinkle with fresh parsley or cilantro before serving. Serve hot straight from the skillet.
Leftovers can be stored in the fridge for up to 3 days.
