Caramel Apple & Pecan Galette with Vanilla Ice Cream

For the Crust:
1 ¼ cups all-purpose flour 🌾

3 medium apples (Granny Smith or Honeycrisp), peeled and thinly sliced 🍎

1 teaspoon ground cinnamon 🌿
¼ teaspoon nutmeg ✨
1 tablespoon cornstarch 🌾
½ cup chopped pecans 🌰
1 teaspoon lemon juice 🍋
For the Caramel Sauce:
¼ cup brown sugar 🍬
2 tablespoons butter 🧈
2 tablespoons heavy cream (or coconut cream) 🥥
Pinch of salt 🧂
For Serving:
Vanilla ice cream 🍦
Extra caramel drizzle 🍯

Make the Dough:
In a bowl, mix flour, sugar, and salt. Cut in the butter using a pastry cutter or fingertips until the mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, until dough just comes together. Form into a disk, wrap in plastic, and refrigerate for 30 minutes. ❄️
Prepare the Filling:
In a large bowl, toss sliced apples with brown sugar, cinnamon, nutmeg, cornstarch, pecans, and lemon juice. Let sit for 10 minutes to release juices. 🍎🌰
Roll Out the Dough:
Preheat oven to 190°C (375°F). On a lightly floured surface, roll the dough into a 30 cm (12-inch) circle. Transfer to a parchment-lined baking sheet. 🌾✨
Assemble the Galette:
Arrange apple mixture in the center of the dough, leaving a 5 cm (2-inch) border. Fold the edges over the filling, pleating slightly to hold shape. Brush crust with a little milk or melted butter and sprinkle with sugar if desired. 🍎🥧
Bake:
Bake for 35–40 minutes, until crust is golden brown and apples are tender. Let cool slightly. 🔥
Make the Caramel Sauce:
In a small saucepan, melt butter with brown sugar over medium heat. Add cream and a pinch of salt, stirring until smooth and glossy. 🍯🧈
Serve:
Drizzle warm caramel sauce over the galette. Slice and serve with a generous scoop of vanilla ice cream. 🍦🍎✨
