Shrimp ceviche (Mexican)

Juice of 5 large lemons

½ kg of large shrimp, peeled and cleaned

¼ cup fresh cilantro, chopped

1 wide of clamato

2 finely chopped onions

1 cucumber, peeled and finely chopped

3 fresh jalapeño peppers, deseeded and chopped

1 bunch of finely chopped radishes

2 cloves of garlic, minced

1 large tomato, chopped, tortilla chips

Step 1

Place the shrimp in a bowl (whole or cut, as you prefer). Add enough lemon juice to completely cover them. Cover and refrigerate for 30 minutes, or until the shrimp are opaque and slightly firm.

Step 2

Add the tomato, onion, cucumber, radishes, and garlic. Stir well. Gradually add the jalapeños and cilantro. Keep in mind that the jalapeños will become more intense as they marinate. Add the clamato until you reach the desired consistency. Cover and refrigerate for 1 hour. Serve cold with tortilla chips.
