Cranberry Orange Pecan Muffins

2 cups all-purpose flour

3/4 cup sugar

2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1 tsp cinnamon

Zest of 1 orange

2/3 cup buttermilk

1/3 cup vegetable oil

2 eggs

1 tsp vanilla extract

Add-ins

1 cup fresh or frozen cranberries (halved if large)

1/2 cup chopped pecans

Extra whole pecans + sugar for topping

The aroma of orange zest and toasted nuts will fill your kitchen with comfort.

Preheat oven to 375°F (190°C). Line a 12-cup muffin pan.

In a large bowl, whisk flour, sugar, baking powder, soda, salt, and cinnamon.

In another bowl, mix buttermilk, oil, eggs, vanilla, and orange zest.

Combine wet and dry ingredients just until mixed (don’t overmix).

Gently fold in cranberries and chopped pecans.

Spoon batter into muffin cups, ¾ full.

Top each muffin with whole pecans and a sprinkle of sugar.

Bake for 20–22 mins until golden and a toothpick comes out clean 🔥

Cool in tin 5 mins, then transfer to a wire rack.

Serve warm or store in an airtight container 🧁
