Granola Blondie Bar

I don’t want a protein bar.
I want something in between — and this is exactly that 🍯🌾
Full of Healthy, Good For You ingredients.
Your kids will actually love them!
RECIPE:
For the Cookie Bottom:
2 cups rolled oats (or oat flour)
1 cup cashew (or any nut)
1/4 cup chia seeds
2/3 cup tahini paste
1/4 tsp. Baking soda
1/4 cup silan date honey or maple syrup
1/4 cup honey
3 tbsp. Avocado oil or coconut oil
For the Granola Topping:
1 cup dried figs
1 cup dried apricots
1/2 cup toasted pumpkin seeds
1/2 cup toasted sunflower seeds
1/4 cup shredded coconut
1/2 cup raisins or dried blueberries
1/2 cup toasted sliced almonds
2/3 cup honey
2 Tbsp. Avocado or coconut oil

In a food processor grind your oats till you have a fine powder texture.
Pour into a big mixing bowl.
In the food processor grind the chia and cashews till a fine powder and then add to the oats.
Add rest of the ingredients for the cookie bottom and mix well together till they form a nice sticky almost dough like consistency.
Press it into a parchment lined baking sheet super flat and thin.
You can use another parchment paper on top and use a rolling plan to help flatten and thin it out
In the food processor again, add your figs and apricots and process for a few minutes till you have smaller chunky peices.
In a separate bowl add the dried fruits and all rest the ingredients for the granola topping.
Mix well and spread out evenly over the cookie bottom.
Place in a 400F oven for 15 minutes.
Let it cool completely. Place it in the fridge or freezer for 30 minutes before slicing into bars.
Store in ziplock in the freezer
