Crème Fraiche Panna Cotta

yield = 6, 4 oz. panna cotta

¼ C. warm water

4 tsp. gelatin

2 C. cream

14 Tbs. sugar

2 C. crème fraiche

2 C. buttermilk

2 tsp. lemon extract

1. Sprinkle gelatin over warm water in a medium shallow bowl and set aside

2. Combine sugar and cream and cook over medium heat until sugar is dissolved

3. Add cream mixture to gelatin and allow to sit 5 minutes

4. Using a whisk add crème fraiche, lemon extract and buttermilk to gelatin mixture

5. Strain through a fine sieve

6. Spray small ramekins with oil spray and make 4 oz. portion

7. Cover with plastic and chill until set
