Lamb Wrapped in Parchment Paper (arnáki Sti Ladókolla

4 kg lamb (shoulder and leg)

Zest of 4 lemons

8 garlic cloves

4 sprigs fresh thyme

4 sprigs fresh rosemary

4 tsp salt

2 tsp black pepper

150 g extra virgin olive oil

4 large sheets of parchment paper

Butcher’s twine

步驟

Mash the salt and garlic into a paste.

Add the chopped herbs, lemon zest, olive oil, and pepper. Mix well.

Rub the lamb with the marinade.

Wrap in parchment paper (4 sheets below, 2 damp sheets on top), seal tightly and tie.

Bake at 100°C (210°F) for 12 hours, then at 180°C (350°F) for 45 minutes until golden.

Tip: Place bone side down when wrapping.
