4. Divide dough into two

Wet Ingredients
3 medium eggs (~150 g without shells)
¾ cup sugar (150 g)
1 cup avocado oil (220 g)
Zest of 1 orange
Juice of ½ orange (30–35 g)
Dry Ingredients
2½ cups all-purpose flour (300 g)
1 teaspoon baking powder (5 g)
Dash of salt (~1 g)
Filling
Apricot jam (or any jam) (about 160–180 g total, as needed)
1 cup finely chopped walnuts or pecans (100 g)
Directions (unchanged)
1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk eggs, sugar, orange zest, juice, and avocado oil until combined.
3. Add dry ingredients and mix with a large spoon until smooth and fully incorporated.
5. On a floured surface, roll each piece to 12 x 6 inches.
6. Spread jam evenly and sprinkle generously with nuts.
7. Roll up carefully, sprinkle with sugar and place seam-side down on baking sheet.
8. Bake 20–25 minutes, until golden and center is firm.
9. Cool slightly, slice.
10. Return slices to a 300°F (150°C) oven for 20 minutes until crisp.
11. Cool completely before storing.
Can be frozen or airtight for 1 week
