Copycat Meghan Markle’s Easy Lemon Olive Oil Cake

Zest of 1 large lemon + juice (¼ cup)

½ cup olive oil

¾ cup sugar

2 eggs

1 tsp vanilla extract

½ cup Greek yogurt or light sour cream

1¾ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

⅛ tsp salt

Icing

1 cup powdered icing sugar

2 tbsp fresh lemon juice

Recipe

In a bowl, grate the lemon and squeeze juice to make ¼ cup.

Add olive oil, sugar, eggs and vanilla; whisk well.

Stir in yogurt (or sour cream), flour, baking powder, baking soda and salt — mix just until combined.

Pour into an 8” springform or round pan.

Bake at 350°F for 30–35 minutes, or until a tester comes out clean. Let cool.

Mix icing sugar with lemon juice until spreadable and pour over the cooled cake.

Simple ingredients. Big flavour. A little taste of sunshine in every bite 🍋
